Favorite Crab Cake Recipe from Dolores Kelley

 

One of my sisters, Lynne Kelley, asked Chef Dolores for a crab cake recipe. Her favorite is the recipe from the Cavalier Golf and Yacht Club in Virginia Beach, VA. We were members of that club when we lived in Virginia Beach. This is a good recipe to share.

 

Cavalier Golf and Yacht Club Crab Cake Recipe

 

1 pound Backfin Crab (preferably Chesapeake Bay Crab not imported crab meat)

2 slices white bread

1 egg

2 dashes of Tabasco Sauce

2 dashes of Worcestershire sauce

1 Tbsp. Mayonnaise

juice of 1/4 lemon

salt and pepper

 

Mix egg, Tabasco sauce, Worcestershire sauce and lemon.

Cut crust from bread and cut  bread into 1/4" inch cubes.

Fold bread gently with crab and mayonnaise.

Add wet ingredients.

Mix and shape into 4 mounds.

Placed on greased cookie sheet.

Bake at 450 degrees for 10 minutes or until brown.

Enjoy!
