It is a good time to make Gazpacho Soup: This is the recipe

Chef Dolores served some of her Gazpacho Soup for lunch. If you love tomatoes, it is a good time to use this recipe. Dolores baked some Cheddar Bay Biscuits to go with the soup. She used the Red Lobster Cheddar Mix that you may purchase at Costco or at your favorite grocery store.

Maryland Gazpacho Soup Recipe

6 cups chopped tomatoes

1 ½ cups chopped cucumber

¾ cup chopped yellow pepper

¾ cup minced onion

3 or 4 jalapeno peppers-minced

1/3 cup olive oil

5 Tbsp. vinegar

½ tsp. minced garlic

¾ cup water

1 can  (8oz.) tomato sauce

Salt and pepper to taste

Prepare all ingredients in a large bowl. Refrigerate overnight. Serve with shredded cheddar cheese and croutons.

There is no cooking.  Gazpacho soup is served cold.

This soup is delicious.  The recipe is from the Heirloom Tomato Festival in Westminster, Maryland.  Tested and recommended by Dolores Kelley.

This soup freezes well so you can enjoy it in later months.

Good afternoon - I have never had it but it sounds like something I would try.

Dear Roy,

You have that right! Gazpacho would be excellent for dinner. Which tomatoes do you use?

Thank you for the great recipe Roy Kelley bookmarking this one.  And as to the Cheddar Bay Biscuits, they are tasty - and the Red Lobster mix makes them easy to prepare and enjoy at home!

Roy, I love that soup and the biscuits, in addition. Lucky you!  Love the beautiful yellow flower.

I so enjoy tomato soup, cold or hot. The tomatoes have been plentiful at my house this summer.

Thanks for the recipe, Roy.  It sounds delicious.  Maybe I can talk the chef of the house to whip some up.

I don't think I have ever had this type of soup, but I am sure that when Dolores makes it, everyone wants a cup!

This soup is served cold. Now is a good time to make it while there is a surplus of tomatoes.
