Taking photowalks through our Kentlands community in Gaithersburg, Maryland is a good way to get a little exercise and to relax while photographing flowers and plants. Some would classify thistle as an annoying weed but if you look closely, you can enjoy the beauty of this small gift of nature.

 

Subhash Sharma This weed flower known as Bull thistle (English) Scottish, or Scotch thistle while a nuisance for the farmer has some edible & medicinal uses. Its edible parts include flowers leaves, oil, root, seed and stem. Its cooked root tastes somewhat like a Jerusalem artichoke, 
but not as nice as it has a rather bland flavour and is best used mixed with other vegetables. The root can also be dried and stored for later use as it is rich in inulin, a starch that cannot be digested by humans. Young leaves can be soaked overnight in salt water and then cooked and eaten. They can be used in salads.

Mr. Sharma is a Facebook friend from India. He now lives in Ireland and frequently comments on my photographs.

My Scottish Irish grandmother was fond of thistles, and often embroidered them on linens.

I grew up on a farm Roy Kelley ....and I spent many days digging these up by the root before the seeds started to blow through the air ....where ever they fell a new would come up,

That is a beautiful picture. It looks a lot like the thistle flower we have out here. Ours appears to be a deeper purple. People hate this plant, but it does have some medicinal value as you said. It also has very pretty flowers.

Roy- I would take a weed like that any day!!  I find it very interesting when I read of plants with medicinal uses.  You have to wonder how in the world they discover this.
